This was so easy and delicious...and made like 8 meals. I just kind of mixed a bunch of ideas I found online for pulled pork in the crockpot.
Ingredients:
2lb pork loin roast, fat trimmed
1 bottle of your favorite BBQ sauce (I used Trader Joe's)
1 large onion, chopped
2 TBSP honey
cooking spray
1. Spray crockpot with nonstick cooking spray.
2. Place chopped onion in bottom of crockpot, and put pork on top of onion.
3. In a small bowl, mix BBQ sauce and honey. Pour over pork and onions.
4. Cook on LOW for about 8 hours.
5. Shred pork and cook another 20 min in the sauce mixture.
I served this with salad and some cornbread (a mix from Trader Joe's)
