Polenta Mini Pizzas
Ingredients
1 tube of pre-made polenta
1 jar pre-made pesto
1 jar of pre-made bruschetta topping
reduced-fat mozzarella cheese
fresh basil (if you like)
cooking spray
1. Preheat oven to 425. Slice polenta into 12 even slices. Spray a cookie sheet with cooking spray and arrange polenta slices on sheet, spray polenta with cooking spray. Bake 5-10 min, flip polenta, spray again and bake another 5-10 min. Polenta slices should get brown and slightly crispy.
2. Remove from oven and put a dab of pesto on each slice, followed by some bruschetta topping. Pop back in the oven for 3-5 min, or until toppings are warm.
3. Remove polenta from oven and put the broiler on. Top with a few sprinkles of mozzarella cheese. Put under broiler for a few min, until cheese is melted and begins to brown.
4. top with sliced fresh basil (I didn't have any when I made these this time around, but it adds some extra flavor). We had ours with a side cesar salad.
